Khao Pad (Thai Fried Rice) Recipe

Khao phad is fried rice with egg and shrimp pudding. Usually served with chopped coriander leaves too.

Material:

  • 3 servings of white rice left over from last night
  • 400 grams of chicken fillet, cut into small cubes
  • 2 chicken eggs, beaten
  • 1 tablespoon garlic, finely chopped
  • 1/2 large onion, sliced
  • 5 tablespoons of cooking oil
  • 5-7 pieces of cayenne pepper
  • 1/2 teaspoon pepper powder
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 tomato, chopped
  • salt to taste
  • scallion to taste, finely sliced

Complementary:

  • enough lemon slices
  • enough cucumber slices
  • coriander leaves, finely chopped

How to Make Thai Fried Rice:

  1. Clean the chicken. Sprinkle with soy sauce and cornstarch. Leave it for 15 minutes.
  2. Scramble the eggs, then set aside.
  3. Heat the oil in a frying pan. Saute minced garlic and onion until fragrant.
  4. Add chicken, tomatoes, chilies, scallions, and scrambled eggs. Stir well.
  5. Add white rice; then season with fish sauce, pepper, salt, sugar, and lime juice.
  6. Cook until the rice is no longer wet. Make a taste correction. If it is according to taste, immediately remove from the stove.
