Potato Cake

What country doesn't love french fries? If we are used to long-sliced French fries, in Australia the popular ones are potato cake or potato scallops. These french fries, which are sliced into rounds and wrapped in flour, can be purchased at roadside stalls. It is very suitable to be a traveling companion that is suitable to be enjoyed while it is warm.

Ingredients :

  • 4 large whole potatoes
  • 2 cups Self Raising Flour
  • 1 teaspoon salt
  • teaspoon pepper
  • 1-¾ cup Water
  • gallon vegetable oil

Preparation :

1. Peel and wash the potatoes, cut into thin slices, about 3mm (1/8 inch) thick, dry well. Sift flour, salt and pepper into a bowl, make a hole in the middle, add water little by little, stirring until the coating mixture is thick enough; Beat until smooth and there are no lumps.

2. Coat the potato wedges with extra flour, removing the excess. Dip each slice into the prepared batter, making sure the potato wedges are well covered. Drain excess batter from each slice before frying.

3. Heat the oil in a large skillet (test the heat of the oil with a small piece of potato, as for potato chips); Fry the potato wedges, little by little, until golden.

Finally – Remove from oil, drain on absorbent paper. Heat a little oil, add potato scallops, fry again until golden brown.

Drain again, sprinkle with salt and serve hot.
