Lavangi special food Azerbaijani Culinary

The cuisine in Azerbaijan is influenced by foods originating from Iran and Turkey. Some of them even have similarities, you know.

Azerbaijani dishes are usually mostly meat based, especially mutton and lamb with recipes passed down from generation to generation.

If you ever set foot in Azerbaijan, I think you should try these nine dishes.

Lavangi is a grilled chicken or fish dish stuffed with walnuts, dried fruit, onions, and various other spices

Ingredients

  • 1 whole chicken
  • 1 c walnut
  • 2 peaches or plums
  • 1 onion (about 1 cup)
  • salt and pepper
  • 1-2 tbsp olive oil

Servings: 4

Preparation:10 Minutes

Cook: 1 Hour 30 Minutes

Preparation

  1. Wash your bird and remove the gizzard.
  2. Pulse walnuts in a food processor. You don't want the walnut flour, but you don't want large chunks. Remove to a bowl.
  3. Coarsely chop the onions and peaches (or plums) and place them in a food processor.
  4. Add walnuts and a quick pulse once or twice - just to combine. Stuff into the bird's cavity.
  5. Sprinkle salt, pepper & olive oil on the outside of the bird, and bake for about 1 1/2 hours or until the bird is cooked through.
  6. Cut the bird into pieces and serve with the filling on the side and a green salad.
